Happy New Year Everyone! The holidays have come and gone and it is time to return to healthier eating habits. If you are like me, I overindulged with cookies and rich meals and am really regretting it right about now. (Tis the season… right?) I usually begin my new year with eating super healthy, bland items with an exercise routine thrown in there. This new routine only lasts a week or two; I then jump ship and abandon my efforts.
This year I am really trying to stick to the after holiday detox by creating mouthwatering, flavorful AND healthy meals that make me excited to eat. Ta da! In walks in the magical crockpot. The crockpot is one of those things I know makes cooking so much easier but I never use it! Shame on me.
With the colder weather we have been having, nothing sounds better than curling up on the couch next to the fire with a bowl of piping hot beef stew.
This healthy crock pot beef stew is super easy to make and will leave your house smelling amazing. The stew is so good you will want it for lunch AND dinner. Pairing the beef stew with zero calorie Southern Breeze Sweet Tea is another way to stay on the healthy new year track with all the flavor of traditional sweet tea with none of the guilt!
Not into eating the same thing multiple days in a row? Just stick the stew in a container and freeze for a later date!

64 oz of Beef Broth
3 pounds of beef chuck
3 garlic cloves, minced
2 bay leaves
3 sprigs of thyme
1 1/2 cups of carrots, chopped
1 ½ cups of mushrooms, sliced
1 ½ cups of chopped celery, chopped
1 small onion, sliced thin
3 TBSP worchestire sauce
2 cubes of beef bouillon cubes
Salt & Pepper to taste
In a large pan with olive oil, brown the beef chuck on all sides
Add all ingredients to the crock pot
Cook on high for 8 hours
Check veggies (if veggies are still firm- cook on high for another 2 hours)
Remove bay leaves and thyme
