Skinny Pulled Pork + Coleslaw Recipe

I just love dining al fresco. The best foods for al fresco dining are barbecue foods, especially pulled pork - but all of that BBQ sauce and mayo-ey coleslaw are full of calories, fat and sugar. I actually prefer more of a Carolina styled pulled pork, so I decided to create a skinny pulled pork and a lighter coleslaw recipe to cure my BBQ cravings.

This recipe isn’t as easy as a leave it and go crock pot recipe, but it is pretty darn close. Just throw the pork shoulder in the over mid-morning so it is ready by dinner time, allowing you plenty of time to get things done around the house.

Your house will smell amazing you guys. Trust me.

Check out the super simple recipe below:

For the Pork:

-6 Pounds of pork shoulder

-2 Cups of apple cider vinegar

-2 Tbsp Paprika

-2 Tbsp chili powder

-2 Tbsp onion powder

-2 Tbsp garlic powder

-Preheat oven to 275 degrees F

-In a small bowl, mix all the dry spices together

-Rub spices all over pork shoulder

-In a Dutch oven, sear each side of the pork shoulder with a little bit of olive oil.

-Cook in oven for 4 hours, covered

-Remove from oven and pour out half of the juices, add 2 cups of apple cider vinegar

-Place back in oven and cook for another 2 hours

-After 6 hours in the oven, the pork should be tender and should easily fall apart

-Shred and set aside to cool a bit

-Add more apple cider if desired

For the slaw:

-About 20 ounces of Red Cabbage, shredded

-About 10 ounces of Green Cabbage, shredded

-1 cup Greek yogurt

– ¾ cup apple cider vinegar

-¼ cup yellow mustard

-Salt & Pepper to taste

Mix all slaw ingredients together until well combined

**Note if you are making this ahead of time or making for meals all week- hold off on adding in the wet ingredients into the slaw. Keep in a separate bowl, mixed and pour over before serving. The slaw can get mushy if left mixed for a few days.
